Made popular by Elijah Muhammad of the nation of Islam in his book How to eat to Live.This pie is not only sweet and filling but is also offers a healthy amount of protein and fiber. Here is a great easy recipe that should satisfy a sweet tooth.
Pie Crust: this makes one 9 inch crust (8 slices)
Ingredients
- 1-1/4 cups Gluten Free Oat Flour
- 2 Tbsp Vegetable Oil
- 4 or 4-1/2 Tbsp Water (chilled)
- 1/4 tsp Sea Salt
Instructions
- First, make sure all ingredients are well chilled.
- Oil a 9" pie plate, set aside.
- In a medium-sized bowl, stir together all ingredients into a ball of dough.
- Pat dough into prepared pie plate.
- Press pastry between fingers to make an edge.
- Set prepared pie crust aside
Pie Filler
Ingredients
- 2 tablespoons chia seeds mixed with ⅔ cups water
- 1 cup almond milk
- 2/3 cup sugar
- 2 cups cooked and mashed navy beans
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl or blender combine chia seed mix, almond milk, and mashed navy beans. Mix well.
- Add sugar, salt, cinnamon, ginger, nutmeg, and cloves. Mix until all ingredients are thoroughly combined.
- Pour mixture into pie crust.
- Bake in preheated oven for 15 minutes.
- Reduce heat to 350 degrees F (175 degrees C) and bake an additional 35 minutes.
This recipe is easy to adapt to different tastes. Try adding dried fruits like raisins, or chopped dates or figs to the filler. Caramelized sliced nuts like pecans could make a good topping. This would also be well served with a dollop of vegan ice cream.
