Started by vegan chef Chloe Coscarelli, by CHLOE is a growing chain of burger restaurants. Coscarelli came to fame after appearing on the Food Network cooking competition television program Cupcake Wars as a vegan chef and won. Moving onto opening the by CHLOE restaurants, she started in New York City and moved onto Los Angeles.
Rapidly expanding since launching is 2015 by CHLOE now has seven total locations in New York and L.A., Coscarelli and her business partner saw launching the restaurant as an opportunity to establish a new concept that did not exist before. By CHLOE is like a vegan answer to the milkshake shoppe. A sampling of the items on the menu are sweet potato air baked fries, a wide variety of salads, a couple of pasta dishes, fresh smoothies and juices, a wide range of burgers and sandwiches of course, even treats for pets, and more.
Coscarelli and her business partner Samantha Wasser said of her restaurant "I think that By Chloe has a great access point for Millennials as an approachable, colorful, fun space," Wasser said. "When Chloe and I were working on the concept, we trusted our instincts for decisions, going off of what we liked and what we would want to see if we were a customer. That reference point I believe helped By Chloe create an environment that welcomes anyone from a student grabbing lunch between class to a business professional picking up dinner for their entire family on their way home from work."
In 2016 by CHLOE was featured on the cooking talk show The Chew. In a blind taste test the hosts and audience members raved over the burgers surprising and delicious flavor. Show host Michael Symon commented that its hard to get a table at one of the New York locations as there is always a line around the block.
