Amaranth Chocolate Chip Cookie Recipe


Here is a wonderful baking recipe for Amaranth. Quick and easy with only a few ingredients its a vegan and gluten free version of a dessert favorite.


Ingredients:
1/2 Cup Amaranth Flour
1 Cup Brown Rice Flour
9 Tbsp Non-Dairy Butter (Vegan)
1/2 Light Brown Suger
1/4  Plain Sugar
1/4 Cup Unsweetened Applesauce
1/4 Cornstarch
1/2 tsp Salt
1/4 Baking Soda
1 Cup Chocolate Chips (Vegan)

Directions:
  1. Preheat oven to 350 degrees F 
  2. In medium size bowl cream Butter and mix with sugars 
  3. Add applesauce to mix
  4. In a separate small bowl, whisk flours, starch, salt, and soda together 
  5. Combine both contents of bowls and mix into a dough
  6. Add chocolate chips to dough mix
  7. Roll the dough into a log, wrap it in parchment paper and place it in refrigerator for one hour
  8. After an hour, spoon or cut the chilled dough into preferred size portions and place on cookie sheet
  9. Bake in oven for 11-12 minutes or until lightly browned

Allow to cool before serving. Cookies come out moist and will firm after cooling.
