Here is a wonderful baking recipe for Amaranth. Quick and easy with only a few ingredients its a vegan and gluten free version of a dessert favorite.
Ingredients:
1/2 Cup Amaranth Flour
1 Cup Brown Rice Flour
9 Tbsp Non-Dairy Butter (Vegan)
1/2 Light Brown Suger
1/4 Plain Sugar
1/4 Cup Unsweetened Applesauce
1/4 Cornstarch
1/2 tsp Salt
1/4 Baking Soda
1 Cup Chocolate Chips (Vegan)
Directions:
- Preheat oven to 350 degrees F
- In medium size bowl cream Butter and mix with sugars
- Add applesauce to mix
- In a separate small bowl, whisk flours, starch, salt, and soda together
- Combine both contents of bowls and mix into a dough
- Add chocolate chips to dough mix
- Roll the dough into a log, wrap it in parchment paper and place it in refrigerator for one hour
- After an hour, spoon or cut the chilled dough into preferred size portions and place on cookie sheet
- Bake in oven for 11-12 minutes or until lightly browned
